✨ Add new mapping property `protocol`

Vincent SIMONIN requested to merge mapping_protocol_select into main

We add the Websocket protocol in the mapping property. Previously, the protocol was only "HTTP / HTTPS".

The migration take this requirement and put by default "HTTP / HTTPS" protocol to all existing stored Mappings.
