chore: Update Node.js version in build job to 18.20.2 | this is the latest v18 version of LTS. required for gaia-x-poc-ui

Astro build requires a newer version of node:

Node.js v18.13.0 is not supported by Astro! Please upgrade Node.js to a supported version: ">=18.14.1"

Does it make sense to use image: node:lts to use the latest LTS image from Node ?
